Pteridium aquilinum is a species of fern in the family Dennstaedtiaceae, commonly known as bracken. It is one of the most widely distributed ferns in the world, found across temperate and subtropical regions of Europe, Asia, North America, and other continents. The genus name Pteridium derives from the Greek pteris, meaning “fern” or “wing,” while the species epithet aquilinum comes from Latin aquila, meaning “eagle,” referring to the eagle-like pattern visible in cross-sections of the rhizome. This plant grows from extensive underground rhizomes and produces large, triangular fronds that can dominate open woodland and grassland habitats.
As a food source, Pteridium aquilinum has a long history of use in various cultures, particularly in East Asia, where the young unfurled fronds, known as fiddleheads, are harvested in spring. In Japan it is called warabi (蕨), and in Korea it is known as gosari, where it is a common ingredient in dishes such as bibimbap. The edible shoots are typically processed by soaking, boiling, or drying to reduce bitterness and remove potentially harmful compounds before consumption. Historically, bracken has also been used in times of scarcity as a starch source, with rhizomes processed into flour in some regions.
Chemically, Pteridium aquilinum contains a range of bioactive compounds, including flavonoids, phenolic acids, and the norsesquiterpene glycoside ptaquiloside, which is known to be toxic and carcinogenic in experimental studies. Ptaquiloside can degrade into reactive intermediates that alkylate DNA, and long-term consumption of improperly processed bracken has been associated with increased cancer risk in both animals and humans. The plant also contains thiaminase, an enzyme that can degrade vitamin B1 (thiamine), potentially leading to deficiency if consumed in large quantities without proper preparation. Traditional processing methods such as soaking in alkaline solutions and thorough cooking are used to reduce these compounds to safer levels. Nutritionally, processed bracken provides dietary fiber and small amounts of vitamins and minerals, though it is not a major nutrient-dense food compared to cultivated vegetables.
