Cornu aspersum, commonly known as the brown garden snail or simply the garden snail, is a terrestrial air-breathing gastropod mollusk in the family Helicidae. Native to the Mediterranean region, Western Europe, and parts of North Africa, it has been widely disseminated globally—often intentionally as a source of escargot or accidentally through the trade of nursery plants and agricultural products. It is arguably the most widely known terrestrial mollusk and has become a naturalized resident in diverse climates across North America, South America, Australia, and New Zealand.
The snail possesses a characteristic globose, heliciform shell that typically measures 25–40 mm in width. The shell is calcareous and remarkably wrinkled, featuring a reticulated pattern of dark brown, golden-brown, or chestnut bands interrupted by yellow flecks or streaks. Its aperture is large, oblique, and bordered by a conspicuous, reflected white lip that usually covers the umbilicus (the shell's central navel). The snail’s body is soft, slimy, and grayish-brown, featuring two pairs of retractile tentacles: the upper pair bears light-sensitive eyes, while the lower pair functions as olfactory and tactile sensors.
Cornu aspersum has been harvested for centuries, primarily in French and Mediterranean culinary traditions where it is prepared as a classic escargot dish, typically served with garlic-herb butter. Its meat is firm, lean, and highly protein-dense, though it requires meticulous cleaning and purging before cooking to ensure the removal of any grit or consumed toxins from its diet. In modern commercial heliciculture (snail farming), Cornu aspersum is favored for its rapid growth rate, high reproductive capacity, and ability to thrive in controlled, high-density environments.
Nutritionally, snail meat is highly prized as a low-fat, high-protein food source, rich in essential amino acids and minerals such as iron, magnesium, and calcium. Its biochemical profile is characterized by high levels of polyunsaturated fatty acids and glycogen. The snail also secretes a complex defensive mucus, which has become a significant interest in modern cosmetic and pharmaceutical industries. This "snail slime," rich in allantoin, glycolic acid, and various glycoproteins, is harvested for its skin-regenerating, moisturizing, and anti-inflammatory properties in topical applications.
