Theobroma cacao is a tropical evergreen tree in the family Malvaceae, native to the humid lowland regions of Central and South America, particularly the Amazon and Orinoco river basins. It is the primary source of cocoa beans, from which chocolate and cocoa products are derived. The genus name Theobroma comes from Greek theos (“god”) and broma (“food”), meaning “food of the gods,” reflecting the cultural and ritual importance of cacao in Mesoamerican civilizations. The species epithet cacao derives from the Nahuatl word cacahuatl, used by the Aztecs to refer to the plant and its beans.
The tree produces large, oval pods that grow directly from the trunk and main branches, a growth pattern known as cauliflory. Each pod contains numerous seeds embedded in a sweet, mucilaginous pulp. These seeds, commonly called cocoa beans, undergo fermentation, drying, roasting, and grinding to produce cocoa mass, cocoa powder, and cocoa butter. Theobroma cacao thrives in shaded, tropical environments with consistent rainfall and has been cultivated for thousands of years, first by the Olmec, Maya, and Aztec civilizations and later spread globally to West Africa and Southeast Asia.
Cacao is used primarily in processed forms rather than consumed raw, although the seed pulp is edible. Fermented and roasted beans are ground into cocoa liquor, which can be separated into cocoa solids and cocoa butter or further processed into chocolate. Cocoa powder is used in beverages, baked goods, and confections, while cocoa butter is used in both food and cosmetic applications. Chocolate products vary widely depending on the proportion of cocoa solids, cocoa butter, and added sugar or milk.
Chemically, Theobroma cacao contains a range of bioactive compounds. The most notable are methylxanthines such as theobromine and smaller amounts of caffeine, which have stimulant and vasodilatory effects. It is also rich in flavonoids, particularly flavan-3-ols such as epicatechin and catechin, as well as procyanidins, which contribute antioxidant activity and have been studied for cardiovascular benefits. Other components include fats (primarily stearic, oleic, and palmitic acids in cocoa butter), polyphenols, and trace minerals such as magnesium and iron.
