Tripneustes ventricosus is a species of sea urchin in the family Toxopneustidae, commonly known as the West Indian sea egg. It is a shallow-water marine echinoderm native to the tropical western Atlantic Ocean, including the Caribbean Sea, the Gulf of Mexico, Bermuda, and the northern coasts of South America, where it inhabits seagrass beds and sandy lagoons. The genus name Tripneustes derives from Greek, with tri- meaning “three” and pneustes meaning “breather”, referring to distinctive features of its ambulacral pore structure, while the species epithet ventricosus comes from Latin meaning “swollen” or “distended,” describing its rounded, inflated test (shell).
Historically and in modern practice, Tripneustes ventricosus has been harvested for its gonads, known locally as sea egg roe, which are consumed fresh or lightly prepared. In Caribbean food traditions, particularly in Barbados, St. Lucia, and other Lesser Antillean islands, the roe is eaten raw with lime juice, pepper sauces, or herbs, or incorporated into dishes such as sea egg cou-cou and fritters. Overharvesting has led to seasonal bans and aquaculture research in some regions to preserve wild populations. Its culinary use is especially associated with Barbadian and eastern Caribbean Creole cuisines.
Nutritionally, the species contains eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), omega-3 fatty acids associated with anti-inflammatory and cardioprotective effects; echinochrome A, a naphthoquinone pigment with antioxidant properties; ovothiol, a sulfur-containing antioxidant molecule; and carotenoids such as β-carotene and astaxanthin, which contribute to both coloration and antioxidant activity. These compounds contribute to the roe’s nutritional profile and potential health benefits, particularly in supporting cardiovascular health and reducing oxidative stress.
