Fagopyrum esculentum is an annual broadleaf plant in the family Polygonaceae, commonly known as common buckwheat. Despite its name, it is not a true cereal grass but a pseudocereal cultivated for its starchy seeds. The genus name Fagopyrum derives from Latin fagus meaning “beech” and Greek pyros meaning “wheat,” referring to the triangular seeds that resemble small beech nuts and are used similarly to wheat. The species epithet esculentum comes from Latin meaning “edible”. Buckwheat is believed to have been domesticated in southwestern China, with early cultivation spreading across Central Asia into Europe and later to North America. It is adapted to cool climates and poor soils, contributing historically to food security in mountainous and marginal agricultural regions.
Historically and in modern usage, Fagopyrum esculentum has been cultivated for its seeds, which are hulled and consumed as groats, milled into flour, or processed into noodles and porridges. In East Asia, buckwheat flour is used to produce soba noodles in Japan and naengmyeon in Korea, while in Eastern Europe it is cooked as kasha. The seeds are rich in starch, moderate in protein with a favorable amino acid profile including lysine, and contain notable phenolic compounds. Buckwheat is also valued as a fast-growing cover crop and nectar source for honey production. As a food source, it produces major ingredients such as buckwheat groats, buckwheat flour, soba noodles, kasha, and buckwheat honey.
Significant bioactive compounds in Fagopyrum esculentum include rutin, quercetin, catechins, fagopyrins (photoreactive naphthodianthrones), and D-chiro-inositol. Rutin and quercetin contribute antioxidant and vascular-protective effects studied in nutritional science, while fagopyrins, concentrated in green plant parts, can cause photosensitivity in high intake. The plant’s phenolic profile contributes both to its slightly bitter flavor and to its documented antioxidant capacity.
