Humulus lupulus is a perennial climbing plant in the family Cannabaceae, widely known as the hop plant and cultivated primarily for its cone-like female inflorescences used in brewing. The genus name Humulus is of uncertain origin but may derive from a Slavic or Germanic root referring to climbing plants, while the species epithet lupulus is Latin for “little wolf,” possibly referring to the plant’s vigorous twining growth habit that appears to “strangle” its supports. Native to temperate regions of Europe, Asia, and North America, Humulus lupulus has been cultivated for centuries, particularly in Europe, where it became an essential component of beer production during the Middle Ages.
The plant grows as a fast-growing bine (a climbing stem that uses rough hairs rather than tendrils), capable of reaching several meters in height during a single growing season. It produces separate male and female plants, with only the female plants being agriculturally valuable for their resin-rich cones. These cones contain specialized glandular structures known as lupulin glands, which produce a complex mixture of resins, essential oils, and polyphenols responsible for the plant’s characteristic bitterness and aroma.
As a food source, Humulus lupulus is used almost exclusively in the production of beer, where hop cones are added during brewing to impart bitterness, aroma, and preservative qualities. The bitter taste comes primarily from alpha acids such as humulone, which are isomerized during boiling into iso-alpha acids that give beer its characteristic bitterness. The essential oils, including compounds such as myrcene, humulene, and caryophyllene, contribute floral, citrus, herbal, or resinous aromas depending on the variety and processing method. Historically, hops were adopted in brewing not only for flavor but also for their antimicrobial properties, which help stabilize beer and extend its shelf life.
Chemically, Humulus lupulus contains a diverse array of bioactive compounds, including alpha acids (humulone, cohumulone, adhumulone), beta acids (lupulone and related compounds), prenylated flavonoids such as xanthohumol, and volatile terpenes. Xanthohumol has been studied for antioxidant and anti-inflammatory properties, while bitter acids exhibit antimicrobial activity. The plant also contains small amounts of phytoestrogenic compounds such as 8-prenylnaringenin, one of the most potent known phytoestrogens, which has been investigated for hormonal effects.
