The plant is a deciduous or semi-evergreen climbing shrub with slender stems and pinnate leaves composed of multiple leaflets. It produces clusters of small, white, star-shaped flowers that bloom primarily in summer and are highly valued for their sweet, penetrating fragrance. As a food source, Jasminum officinale is primarily used for its flowers, which are employed to scent teas and flavor certain culinary preparations. The most notable use is in the production of jasmine tea, where fresh jasmine blossoms are layered with tea leaves—often green tea—to allow the volatile aromatic compounds of the flowers to infuse into the tea. This process may be repeated multiple times to intensify the fragrance. In some regions, the flowers are also used in syrups, desserts, or as decorative edible garnishes, though their primary culinary value lies in aroma rather than bulk consumption.
Chemically, the flowers contain a complex mixture of volatile aromatic compounds, including benzyl acetate, linalool, indole, and jasmonates, which together produce the characteristic floral scent. These compounds are highly odorous and relatively heat-sensitive, contributing to their effectiveness in fragrance transfer during gentle processing such as tea scenting. The plant also contains small amounts of flavonoids and other phenolic compounds that may have mild antioxidant activity.
