Cucurbita maxima is a species of large, edible gourd in the family Cucurbitaceae, commonly known as giant squash. The genus name Cucurbita comes from Latin, originally used to describe gourd-like fruits, while maxima is Latin for “largest” or “greatest,” reflecting the species’ tendency to produce very large fruits compared with other cultivated squashes. Cucurbita maxima is believed to have been domesticated in the Americas, particularly in regions of northern South America, and it has been cultivated for thousands of years for its edible flesh, seeds, and storage qualities. Today, it is grown worldwide, especially in the Americas, Europe, and Asia, with numerous types of cultivars selected for culinary use such as the kabocha, buttercup, hubbard, and banana squashes.
As a food source, Cucurbita maxima often produces fruits with thick, sweet, orange to yellow flesh and a firm rind that can be cooked, roasted, pureed, or processed into soups, pies, and desserts. The seeds, often called pepitas, are also edible, consumed roasted, salted, or pressed for oil. Historically, the species was a staple food in pre-Columbian agriculture, providing nutrition and long-term storage during winter months. In modern cuisine, it is used in both sweet and savory preparations across cultures: in North America for pumpkin pies and soups, in South America for stews and porridges, in Europe as roasted or mashed squash, and in East Asia for soups, tempura, and desserts. Major ingredients derived from this species include fresh pumpkin flesh, pumpkin puree, pumpkin seeds, and pumpkin seed oil.
Cucurbita maxima contains a range of bioactive compounds contributing to its nutritional and health properties. The flesh is rich in carotenoids such as β-carotene, which provides vitamin A precursors and antioxidant effects, and lutein and zeaxanthin, which support eye health. Seeds are high in unsaturated fatty acids (oleic and linoleic acids), phytosterols, tocopherols, and minerals such as magnesium and zinc. Cucurbitacins, bitter triterpenoids, may be present in low amounts in some cultivars and can be toxic at high concentrations, though domesticated varieties have been selected for palatability.
