Seriola quinqueradiata is a marine fish species in the family Carangidae, commonly known as the Japanese amberjack or yellowtail. It is native to the northwest Pacific Ocean, particularly around Japan, Korea, and parts of China, where it inhabits coastal and offshore waters. The genus name Seriola derives from a Latin term historically used for certain marine fishes, while the species epithet quinqueradiata combines the Latin words quinque (“five”) and radiatus (“rayed”), referring to the five prominent spines in the first dorsal fin. In Japan the species is widely known as buri (ブリ) when fully grown, with different life-stage names such as hamachi commonly used in culinary contexts.
This species is a fast-swimming pelagic predator that forms schools in open water and near coastal environments. It feeds on smaller fish, squid, and crustaceans and can grow to substantial size, sometimes exceeding one meter in length. Because of its favorable growth rate and desirable flesh quality, Seriola quinqueradiata has become one of the most important aquaculture fish species in Japan, with large-scale farming operations producing fish for domestic consumption and export.
As a food source, Japanese amberjack is highly valued for its firm texture and rich, oily flesh. It is widely consumed in Japanese cuisine in a variety of forms, including raw preparations such as sashimi and sushi, as well as grilled, simmered, or braised dishes. A well-known preparation is buri daikon, in which the fish is simmered with daikon radish in a soy-based broth. Younger stages of fish are especially popular in sushi due to their tender texture and balanced fat content. In the Kanto region of Japan, the intermediate stages from youngest to oldest are known as tsubasu, hamachi, and mejiro while in the the Kansai region they are known as wakashi, inada, and warasa.
Nutritionally, the flesh of Seriola quinqueradiata is rich in high-quality protein and marine omega-3 fatty acids, particularly eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), which contribute to cardiovascular and neurological health. It also provides essential micronutrients including vitamin B12, vitamin D, selenium, and potassium. Compounds present in the fish include taurine and small peptides formed during digestion or processing, which have been studied for antioxidant and metabolic effects.
