Coturnix japonica is a small ground-dwelling bird species in the family Phasianidae, commonly known as the Japanese quail. It is native to East Asia, including Japan, Korea, China, and parts of southeastern Russia, where it historically inhabited grasslands and agricultural fields. The genus name Coturnix derives from the Latin word for “quail,” while the species epithet japonica means “of Japan”. Although wild populations are migratory, the species has been domesticated for centuries in Japan and later throughout East and Southeast Asia.
Historically, Coturnix japonica was selectively bred beginning in the Edo period primarily for egg production, and modern commercial lines were further developed in the 20th century for both meat and eggs. Coturnix japonica produces quail eggs and quail meat, both of which are widely consumed. Quail eggs are small, speckled, and prized for their rich yolk-to-white ratio, while the meat is tender and relatively lean. In Japanese cuisine, quail eggs are commonly served raw atop sushi or incorporated into hot pot dishes, while grilled or skewered quail (yakitori-style) is also popular. The species has also become important in Chinese, Korean, Southeast Asian, Mediterranean, and European cuisines, where quail eggs are boiled, pickled, or added to salads and braised dishes. Industrial quail farming has expanded globally due to the bird’s rapid maturation, high egg-laying rate, and small space requirements.
Nutritionally, Coturnix japonica eggs and meat contain several significant bioactive compounds. The eggs are rich in phospholipids such as phosphatidylcholine and sphingomyelin, which support cellular membrane structure and neurological function; ovomucoid and other egg white proteins with immunomodulatory potential; lutein and zeaxanthin, carotenoids that contribute to ocular health. The meat provides heme iron, which is highly bioavailable, as well as creatine, which supports muscular energy metabolism, and conjugated linoleic acid (CLA) in small quantities. The eggs are not inherently toxic and contain no significant cyanogenic or alkaloid compounds, though like other avian eggs they may carry microbial risks if consumed raw.
