Huso dauricus, universally known as the Kaluga or Kaluga sturgeon, is a massive apex predator fish belonging to the sturgeon family (Acipenseridae). It is endemic to the Amur River basin, which forms the political border between the Russian Far East and northeastern China (Manchuria), as well as adjacent brackish coastal waters of the Sea of Okhotsk and the Sea of Japan. The genus name Huso is derived from an old German word for sturgeon, while the species epithet dauricus references Dauria, a historical region in the trans-Baikal area of eastern Siberia. Historically, the Kaluga has been a legendary and deeply revered resource among indigenous Siberian peoples like the Nanai and Ulch, but over the last two centuries, it became globally famous—and heavily exploited—as one of the world's premier sources of luxury black caviar.
The Kaluga is one of the largest freshwater fish in the world, capable of growing up to 5.6 meters in length and weighing over 1,000 kilograms. It is characterized by a long, sharply pointed snout, a massive crescent-shaped mouth located underneath its head, and five rows of sharp, bony plates called scutes running along its triangular body. Unlike many other sturgeon species that feed primarily on bottom-dwelling invertebrates, Huso dauricus is a fierce, voracious carnivore; upon reaching adulthood, it shifts to a diet almost entirely composed of other fish, such as chum salmon. The species is exceptionally long-lived, often reaching over 80 years of age, but it reproduces very slowly, requiring 14 to 20 years to reach sexual maturity. It thrives in large, deep, fast-flowing river currents with gravelly riverbeds, which are essential for its spawning migrations.
As a food source, the Kaluga is internationally legendary for its unfertilized eggs, which are processed into Kaluga caviar. The roe is highly prized by gastronomes for its large size, firm texture, and a lustrous color ranging from dark glossy green to warm golden-brown. Its flavor profile is celebrated for being intensely creamy, buttery, and smooth, with a subtle, clean brine note that lingers on the palate. Historically, the rich, firm, boneless white meat of the fish was also heavily consumed—either smoked, salted, or used in traditional regional sturgeon soups—but contemporary culinary use is almost strictly limited to the eggs. Due to critical population collapses driven by historical overfishing and poaching, wild harvest is heavily restricted, and modern Kaluga caviar is primarily sourced from highly regulated, sophisticated aquaculture facilities, particularly in China's Zhejiang province.
Nutritionally, Kaluga caviar is a highly concentrated source of premium proteins, essential amino acids, and healthy lipids. It is exceptionally dense in omega-3 fatty acids—specifically eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA)—which support cardiovascular health, cognitive function, and cellular repair. The biochemical matrix of the roe is also rich in fat-soluble vitamins, including Vitamin A, Vitamin D, and Vitamin E, alongside vital minerals like selenium and iron. The signature rich, buttery mouthfeel of the eggs is driven by high concentrations of specialized lecithins, cholesterol, and structural phospholipids. In modern food science, research into Kaluga tissue and roe centers on identifying bioactive peptides that can inhibit angiotensin-converting enzymes (ACE) to help regulate blood pressure.
