Anoplopoma fimbria is a large marine fish species in the family Anoplopomatidae, commonly known as sablefish or black cod. Despite the common name “black cod,” it is not a true cod but belongs to a distinct taxonomic lineage as one of only two species left in its family. The species is native to the cold waters of the North Pacific Ocean, where it ranges from northern Japan and the Sea of Okhotsk across the Bering Sea to the west coast of North America, extending southward to California. The genus name Anoplopoma derives from Greek roots meaning “unarmed lid” or “unarmed covering,” referring to anatomical features of the head and gill structures observed in early taxonomic descriptions, while the species epithet fimbria comes from Latin meaning “fringe” or “border,” referring to the fringed or filamentous structures associated with parts of its fins. In Japanese it is widely known as gindara (銀鱈), meaning “silver cod,” a commercial name reflecting its pale flesh and high culinary value.
Anoplopoma fimbria inhabits deep coastal and continental slope environments, typically between about 300 and 900 meters in depth, although juveniles occur in shallower waters. The fish has an elongated body, dark coloration, and a high lipid content that gives its flesh a rich, buttery texture. It is an important commercial species in fisheries of Japan, Alaska, Canada, and the United States. Historically and in modern cuisine it is prized for its high oil content and delicate flavor. In Japanese cooking it is often prepared by marinating fillets in fermented seasonings such as miso before grilling, as in the well-known dish miso-marinated black cod, while in other cuisines it may be smoked, roasted, or braised.
Anoplopoma fimbria provides firm, white flesh rich in marine lipids. The fish is notable for its high levels of omega-3 fatty acids, particularly eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), which contribute to cardiovascular and neurological health in human nutrition. The flesh also contains taurine and small bioactive peptides formed during digestion or fermentation that have been investigated for antioxidant and antihypertensive activity in experimental studies. Its lipid-rich tissue contributes to the characteristic texture that allows it to remain moist during high-heat cooking.
