It is cultivated for its seeds, which yield edible oil, and for its vividly colored florets, historically used as dye and culinary coloring. The genus name Carthamus derives from the Arabic qurṭum or qurṭom, referring to the dye plant, while the species epithet tinctorius is Latin for “used in dyeing”. Safflower is believed to have originated in the Near East or eastern Mediterranean region and was widely cultivated in ancient Egypt, Mesopotamia, and later across South Asia and East Asia.
Botanically, Carthamus tinctorius is characterized by spiny leaves and bright orange to yellow composite flower heads. Historically, the dried florets were used to produce red and yellow dyes, including carthamin, which was used in textiles and cosmetics. In culinary contexts, the florets have been used as a more affordable substitute for saffron, imparting color rather than strong flavor. The seeds are pressed to produce safflower oil, which exists in high-linoleic and high-oleic varieties depending on cultivar. Modern agricultural production focuses primarily on oilseed use, with safflower oil valued for its light taste and stability in cooking.
