Manilkara zapota, universally known as the sapodilla, chicoo, chicle, or naseberry, is a long-lived, slow-growing evergreen tree in the family Sapotaceae. It is native to the Yucatán Peninsula, Mexico, and Central America, but has been widely naturalized and cultivated across tropical regions of the Caribbean, India, Southeast Asia, and Africa. The genus name Manilkara is derived from the Malayalam name for a related species, while the species epithet zapota stems from the Nahuatl word tzapotl, meaning "soft fruit." Historically, this tree is perhaps most famous for its role as the primary source of chicle, a natural latex harvested from the bark that served as the original base for chewing gum before the widespread adoption of synthetic polymers.
The tree typically reaches heights of 10 to 30 meters, characterized by a dense, symmetrical crown of dark, glossy, leathery leaves and a thick, fibrous, reddish-brown bark that exudes a milky latex when injured. It produces small, inconspicuous, bell-shaped flowers that bloom continuously throughout the year. The fruit is a globose or oval berry, roughly the size of a peach, featuring a rough, scurfy, potato-like brown skin. Inside, the flesh ranges from pale yellow to deep, grainy brownish-orange, with a consistency often compared to a caramelized pear. The fruit is usually harvested when firm and allowed to ripen until the flesh becomes soft, sweet, and aromatic. Manilkara zapota thrives in hot, humid tropical climates and is surprisingly hardy, capable of tolerating strong winds and periodic drought once established.
Sapodilla is celebrated in tropical gastronomy for its extraordinarily high sugar content and unique, decadent flavor profile, often described as a blend of brown sugar, cinnamon, malt, and pear. Because the ripe fruit is incredibly soft and bruises easily, it is primarily consumed locally or processed immediately into value-added products. In India and Southeast Asia, it is commonly blended into refreshing milkshakes, smoothies, and ice creams, where its intense sweetness eliminates the need for added sugar. In Latin American and Caribbean cultures, it is frequently eaten fresh, pureed into fruit salads, or cooked into syrups and jams.
