Capsicum annuum var. annuum ‘Shishito’ is a cultivated chili pepper in the family Solanaceae, grown primarily for its small, thin-walled green fruits used in East Asian cuisine. The genus name Capsicum derives from the Greek kapsa meaning “box” or “capsule,” referring to the hollow fruit structure, while the species name annuum comes from Latin meaning “annual,” reflecting the plant’s typical cultivation cycle. The cultivar name “Shishito” comes from the Japanese shishi-tōgarashi (獅子唐辛子), meaning “lion pepper,” referring to the wrinkled tip of the fruit that resembles the head of a lion in traditional descriptions. Although peppers of the species Capsicum annuum originated in Mesoamerica and were domesticated thousands of years ago, the Shishito cultivar was developed and popularized in Japan.
The plant is a small to medium-sized annual herb with branching stems, green leaves, and white flowers typical of the nightshade family. The fruits are slender, slightly wrinkled peppers usually harvested while still green and immature, typically about 5–10 centimeters long. Shishito peppers are known for their generally mild flavor with only occasional spicy fruits, a variability caused by uneven accumulation of capsaicinoids during fruit development. Because most peppers are mild, the occasional hot fruit has become a well-known characteristic of the cultivar, with about 1 out of 10 peppers beings significantly hotter.
As a food source, Capsicum annuum ‘Shishito’ is valued for its delicate texture and mild, slightly sweet pepper flavor. The peppers are commonly prepared by blistering or pan-roasting in oil until the skins char lightly, then seasoning with salt or soy-based sauces. They are frequently served as appetizers or side dishes in Japanese cuisine and are increasingly popular internationally. The thin skin and tender flesh allow the peppers to cook quickly while maintaining a fresh vegetal flavor.
Chemically, Shishito peppers contain typical pepper phytochemicals including capsaicinoids such as capsaicin and dihydrocapsaicin, though generally in low concentrations compared with hot chili varieties. They also contain carotenoid pigments, vitamin C (ascorbic acid), vitamin A precursors, and polyphenolic compounds that contribute antioxidant activity. The mild heat and aroma of the fruit arise from a combination of these compounds along with volatile terpenes produced in the pepper tissues.
