Acipenser stellatus, universally known as the starry sturgeon, stellate sturgeon, or sevruga, is an anadromous fish belonging to the ancient family Acipenseridae. It is native to the Caspian, Black, and Azov Sea basins, migrating up adjacent rivers such as the Volga, Danube, and Ural to spawn. The genus name Acipenser is the classical Latin term for sturgeon, while the species epithet stellatus translates to "starred" or "starry," a direct reference to the pale, star-like bony plates (scutes) that stud its dark skin. Historically, the starry sturgeon has been a keystone species in Eurasian river cultures and global luxury gastronomy, globally celebrated as the source of authentic Sevruga caviar.
The fish is instantly recognizable by its remarkably elongated, compressed, and upturned snout (rostrum), which is significantly longer than that of most other sturgeon species. Its slender, hydrodynamic body features five rows of prominent, pale lateral scutes that contrast sharply with its dark, grayish-black dorsal coloration. It possesses four short, non-fringed barbels positioned closer to the mouth than the tip of the snout, which it uses to detect prey along the muddy benthos (river or sea floor). Acipenser stellatus is a slow-maturing species, with males reaching maturity at roughly 6 to 11 years and females at 10 to 14 years. Due to severe historical overfishing for its eggs, habitat fragmentation from damming, and poaching, wild populations are critically endangered, forcing a shift toward highly regulated, inland recirculating aquaculture systems (RAS) across Europe and parts of Asia.
As a food source, Acipenser stellatus yields two highly distinct gastronomic products: its exceptionally prized roe and its dense, boneless flesh. Sevruga caviar is world-renowned for having the smallest grains among the primary sturgeon varieties (Beluga and Osetra), yet it delivers the most intense, robustly maritime, and buttery flavor profile. The eggs typically range in color from light pearlescent gray to charcoal black and are prized for their delicate, popping texture. The meat of the starry sturgeon is also a historical delicacy in Russian, Persian, and Eastern European cuisines; possessing a firm, meaty texture with no intramuscular bones, it is traditionally sliced into steaks to be skewered and grilled as shashlik, hot-smoked over hardwood, or simmered in rich, aromatic fish broths like ukha.
Nutritionally, both the meat and the roe of the starry sturgeon are exceptionally rich in high-quality protein, essential amino acids, and long-chain omega-3 fatty acids (EPA and DHA). The lipid profile of the fish is dominated by healthy polyunsaturated fats, which contribute to its meltingly tender texture when cooked. The roe provides a concentrated source of Vitamin B12, selenium, iron, and lecithin, a critical phospholipid complex that supports cellular membrane integrity and brain function. Modern ethnobiological research focuses on tracking the precise fatty acid and lipid biomarkers in farmed vs. wild sturgeon to authenticate caviar origins, preserve heritage processing methods like malossol (light salting), and ensure the sustainable survival of this ancient lineage.
