Benincasa hispida is a vine-growing plant in the family Cucurbitaceae, widely cultivated in Asia for its large edible fruit, commonly known as winter melon, wax gourd, or ash gourd. The genus name Benincasa honors the Italian nobleman Giuseppe Benincasa, while the species epithet hispida derives from Latin meaning “hairy” or “bristly,” referring to the fine hairs present on young fruits and plant surfaces. The plant is believed to have originated in Southeast Asia or the Indian subcontinent and has been cultivated for centuries across China, Japan, India, and other parts of Asia.
The plant is an annual trailing vine with broad leaves, yellow flowers, and large oblong fruits that can reach substantial size. As the fruit matures, it develops a characteristic waxy coating on its rind, which helps reduce water loss and allows for long-term storage, giving rise to the name “wax gourd.” The interior flesh is white, firm, and mild in flavor, with high water content and a texture that softens upon cooking. Because of its excellent storage properties, it has historically been an important vegetable for preservation and use outside the growing season.

In Chinese cuisine, winter melon soup is a classic dish, and the fruit is also used in sweet preparations such as candied winter melon. In India, it is used in curries and sweets such as petha. The seeds are edible and may be consumed roasted, while the rind is sometimes used in pickling.
Nutritionally, winter melon is low in calories and rich in water, making it a hydrating food. It contains vitamin C, small amounts of B vitamins, potassium, and dietary fiber.
